From the aromatic Beef Rendang to the indulgent Rum Bundt Cake, these four recipes are sure to make your dad’s taste buds sing and make him feel loved and appreciated.

     Beef Rendang

     Hailing from the vibrant cuisine of Indonesia, this dish is a true masterpiece that embodies the richness of heritage and the depth of flavour. For the spice paste, you will need: 2 shallots, 2 cloves garlic, 2 tablespoons grated ginger, 2 tablespoons ground coriander, 2 tablespoons ground cumin, 2 tablespoons ground turmeric, 2 tablespoons dried chilli flakes, 2 tablespoons oil, and 2 tablespoons tamarind paste. For the curry, you will need: 500g beef shin, 2 tablespoons oil, 2 tablespoons palm sugar, 1 stalk lemongrass, 1 cinnamon stick, 2 star anise, 2 kaffir lime leaves, 2 cups coconut milk, and 2 tablespoons fish sauce. To make the spice paste, blend the shallots, garlic, ginger, coriander, cumin, turmeric, chilli flakes, oil, and tamarind paste until smooth. Heat the oil in a large pot over medium heat, add the spice paste and fry until fragrant. Add the beef and fry for 5 minutes. Add the palm sugar, lemongrass, cinnamon stick, star anise, kaffir lime leaves, coconut milk, and fish sauce. Simmer until the beef is tender, stirring occasionally. Serve with steamed rice or warm naan.

     Chipotle Roasted Pork Belly

     A dish that exemplifies the perfect balance between crackling skin and succulent meat. To make this dish, you will need: 1.5kg pork belly, 2 tablespoons smoked paprika, 2 tablespoons ground cumin, 2 tablespoons garlic powder, 2 tablespoons onion powder, 2 tablespoons oregano, 2 tablespoons black pepper, 2 tablespoons chipotle chilli powder, 2 tablespoons olive oil, and 2 tablespoons sea salt. Preheat the oven to 220°C. Place the pork belly on a roasting tray. In a bowl, mix together the smoked paprika, cumin, garlic powder, onion powder, oregano, black pepper, chipotle chilli powder, olive oil, and sea salt. Rub the mixture onto the pork belly and place in the oven. Roast for 40 minutes, then reduce the heat to 180°C and roast for a further 20 minutes. Remove from the oven and allow to rest for 10 minutes before slicing. Serve with your favourite sides.

     Lamb Ragu Pasta

     This dish is a celebration of comfort and sophistication, as tender shreds of lamb are slowly simmered in a robust tomato sauce enriched with fragrant herbs and spices. To make this dish, you will need: 500g lamb mince, 2 tablespoons olive oil, 1 onion, 2 cloves garlic, 1 teaspoon dried oregano, 1 teaspoon dried basil, 1 teaspoon dried thyme, 1 teaspoon smoked paprika, 1 teaspoon ground cumin, 2 tablespoons tomato paste, 1 cup red wine, 2 x 400g cans chopped tomatoes, 2 tablespoons sugar, 2 tablespoons balsamic vinegar, 1 bay leaf, and 500g pasta. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and fry until softened. Add the lamb mince and fry until browned. Add the oregano, basil, thyme, smoked paprika, and cumin and fry for a further minute. Add the tomato paste, red wine, chopped tomatoes, sugar, balsamic vinegar, and bay leaf. Reduce the heat to low and simmer for 1 hour, stirring occasionally. Cook the pasta according to the packet instructions. Serve the lamb ragu over the cooked pasta.

     Rum Bundt Cake

     A delectable dessert that pays homage to the sweet joys of life and the indulgence of celebration. To make this cake, you will need: 2 cups all-purpose flour, 1 teaspoon baking powder, 1 teaspoon baking soda, 1 teaspoon ground cinnamon, 1 teaspoon ground nutmeg, ½ teaspoon ground cloves, ¼ teaspoon ground ginger, ¼ teaspoon sea salt, 1 cup dark brown sugar, ½ cup vegetable oil, 2 eggs, 1 teaspoon vanilla extract, 1 cup full-fat Greek yoghurt, and ¼ cup dark rum. For the rum syrup, you will need: ¼ cup dark rum, ¼ cup honey, and 2 tablespoons butter. Preheat the oven to 180°C and grease a bundt cake tin. In a bowl, mix together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, ginger, and salt. In a separate bowl, mix together the brown sugar, oil, eggs, vanilla extract, and yoghurt. Add the dry ingredients to the wet ingredients and mix until just combined. Pour the batter into the bundt cake tin and bake for 40 minutes, or until a skewer inserted into the centre comes out clean. To make the rum syrup, heat the rum, honey, and butter in a small saucepan over medium heat. Simmer for 5 minutes, stirring occasionally. When the cake is done, allow to cool for 10 minutes before removing from the tin. Drizzle the rum syrup over the cake and enjoy.
